Work on Your Cooking Skills: 3 Healthy Recipes

Let’s keep it healthy and simple. A lot of us found ourselves cooking a lot more than usual lately. Despite the tedious clean-up, it’s not all that bad. Did you know that cooking is actually great for your brain? It makes us focus, tap into our creativity, solve problems and multitask. And it can be great for our bodies too! Let’s cook up something healthy, easy, and delicious!

Spicy lentil & veggies soup

Ingredients:

  • 2 tbsp olive oil
  • 1 onion
  • 2 carrots
  • 1 zucchini
  • 2 paprikas
  • 150g red lentils
  • Pepper
  • Salt
  • Chili flakes

Firstly, chop all your veggies into small chunks. Secondly, put the pot on the stove over medium heat. Then pour the olive oil into the pot and once it heats up add the onion. When the onion starts to brown, add the carrots, zucchini and paprikas. Stir the veggies and let them simmer in olive oil for a couple of minutes. Now add the lentils and stir them around the pan for just a few seconds. Cover everything in about a liter of hot water. Bring to a simmer and let everything cook for 15-20 mins, stirring occasionally. Once the carrots are soft, your lentil soup is ready. Don’t forget to add seasoning according to taste. We recommend adding a pinch of chili flakes if you’re into spicy foods. Bon appetit!

Smoked salmon, chickpeas & leafy greens

Ingredients:

  • Salt, Pepper
  • 2 tbsp olive oil
  • 1 tbsp aceto balsamico
  • 3 large garlic cloves
  • 150g smoked salmon
  • 1 can of chickpeas
  • 6 cups baby spinach
  • 4 cups arugula
  • 3 scallions

This salad is so simple yet so delicious! Rinse the chickpeas well. Dice the garlic cloves finely. Chop up the baby spinach, arugula, scallions and the smoked salmon into larger chunks. Toss all the ingredients together in a bowl. Season with salt, pepper, aceto balsamico and olive oil. Mix everything thoroughly. You can even add some cream cheese if you're into cheesy things. Voila!

Fish, broccoli, and cauliflower out of the oven

Ingredients:

  • Salt, Pepper
  • 4 tbsp olive oil
  • Minced garlic
  • Mediterranean spices (parsley, basil, rosemary, bay leaf)
  • 2 broccolis
  • 1 large cauliflower
  • 2 large fish: gilt-head bream, sea-bass, grey mullet or hake

Wash and clean your veggies and fish - get rid of the nasty gut and the sharp scales. Chop the veggies into small chunks. Lay them on a baking sheet in a baking tray. Season them freely with salt, pepper, minced garlic, mediterranean spices and a dash of olive oil. Mix all the spices in a cup, cover your fish with olive oil and the spice mixture abundantly. Lay the fish over the veggies and cover the baking tray with aluminum foil. Bake in a preheated oven at 400°F for 20 minutes. After the initial 20 minutes take the aluminum foil off. Let everything bake for additional 20-25 minutes. When the fish skin gets golden brown, serve away! We hope you feel inspired to try some culinary arts!
